Premium Raw Arctic Sweet Shrimp

Arctic sweet shrimp, raw and left whole with the head on, their bodies pale pink and faintly translucent and their tails a clean bright red. The legs and antennae are fine and translucent, and the flesh has a soft gloss along the back. They are shown three ways: rows laid out on a pale bamboo mat; a plate of them with a small dish of pale sauce and a green leaf; and a long row on a wooden board, the tails fanned out in a line.

The flesh is sweet and tender, closer to a delicate prawn than a firm shrimp, and it turns opaque in seconds. Serve them raw as sashimi with soy and wasabi, or blanch them briefly and chill them for a cold plate.

Keep frozen at -18°C or below. Thaw in the refrigerator; if serving raw, use within a day of thawing.
