Seasoned Shredded Squid Strips
Squid cut into fine strips, translucent white through the body with a reddened edge along each piece, the surface glossy and faintly oiled. The strips are loose and springy, tangling into soft heaps rather than clumping. They are shown three ways: a small plate on a wooden board with chopsticks and a pair of tongs; a generous plate piled high on a white plate in a steel kitchen; and a clear glass bowl holding a further heap, the light catching the shiny edges.
The strips are chewy and savoury with a gentle sweetness and a light chilli warmth. Eat them straight from the bowl as a snack, scatter them over rice or congee, or fold them through a cold salad for crunch and salt.
